The right batter is the key to this bait.

So I bought this for my birthday with my own money. I couldn't wait to open it up and start making extruded noodles. All summer I've enjoyed making pasta with my kitchen press and spaghetti and fettuccine machines. Made ravioli and tortellini. I'm used to working with my quail egg pasta dough (it's a wetter dough). Anyway, I followed the T-recipe that came with this new purchase. OMG I couldn't assemble it it was too dry. I added a little more water and then the dough became too moist to go through the machine without deforming the pasta shapes. I had a complete mess on my hands. Like an idiot I started with the Fussili disc. Anyway, after searching the internet a lot for extruded pasta recipes, I came across an amazing site and recipe. You need to flow the dry mix through the machine so your shapes stay true and don't stick together when you cut them. Now I'm in love with this easy recipe I found. It works like a charm every time. My biggest problem is cutting all the pasta to the same size. When making small noodles, I start the machine, count to five and cut, repeating and adding crumbs from the dough over and over again. Cleaning is super easy if you brush out any leftover clumps of dough and then just let it dry overnight. In the morning, dried pieces of dough fall out immediately.
