You will take plenty of water. It is in order. I usually fill a bucket and put them in the bucket for 30 minutes. The lower holder has a rubberized anti-slip coating that prevents the stone from slipping. The last thing you want is for your knife to slip and cut itself. Start with a lower number up to a higher number, a few passes is more than enough. I usually do 5 to 10 times on each stone. Excellent quality stones. With this set I was able to get my oldest and most abused knives pretty sharp and they didn't wear out too much. I did a paper cut test and it cut without tearing. Perfectly sharpened, like new again. The leather part is not the best quality but it works fine. Bring a pair of cutting gloves, which is fine. Very happy with this find.
