My first review was titled Good size but not the quality I was looking for due to environmental protection and higher temperature for frying fish. good size but cannot fry fish in our Breville Smart Oven as hoped. Pan buckles, flaps and 400 degree bends, I get by with 300 degrees. Ideally I'd like to avoid aluminum as well as nickel for my health and I'm also not sure about the alloys in this pan. I'm not a very good cook and maybe I expect too much. To update. I still use this pan weekly and have changed my mind. It's only had a period of getting used to since I haven't had any issues with it, I still use it at 400 degrees but it hasn't warped. I clean well and look new. Every time I use it I think I have to correct this negative review I made. I'm glad I enjoy the pan now.
