I suspected my oven was hotter than the display and my digital thermometer said so. However, this thermometer read the dead zone so quickly that I couldn't tell exactly what the average temperature was. I needed slower changes in the thermometer so I used these two together. Both read an accurate average temperature which saved me quite a bit of math by averaging the maximum and minimum for the dead zone and then averaging the readings. The digital thermometer showed I could be within 25 degrees of error, and two analog thermometers from Anvin actually confirmed my estimate of the error. The oven was set at 350 degrees and the digital thermometer read 350 = burner ON; 400 = Burner OFF. Two Anvin analog thermometers read 375, which was the correct temperature. Analog thermometers change relatively slowly, so if they are slow to respond to temperature changes, they will eventually settle to a fairly accurate average temperature.
