I waited a week before checking so I could tell how fresh the oil would be. Usually changing it about every week and a half is enough for me (it's almost 1.5 US cups). Results: The oil is very fresh. It doesn't have that slight color and smell change that happens when I use plastic or glass containers. After a few days the oil started to look and smell a little fishy. I'm 60 and remember one of my grandmothers using something similar over 50 years ago. Problem is, I wasn't sure how much water to put on the bottom. The instructions weren't very clear to those who had never used them. Now I've poured some water *under* the marks. Another reviewer gave great tips on how to pack the butter tightly (and I love it when the butter is still a bit solid). Also, I leave some space around the edge so some of the oil doesn't get wet and I still get a good seal. i love skulls I would like one with a small butter knife loop. By the way, if you are thinking of giving it as a gift, it comes in a very nice packaging and it was packed so well that it does not break.
