The temperature is rising too slowly to be precise.

Bought to replace an old metal and glass Taylor thermometer when temperatures started to drop due to frequent cleaning. Bought a standard old school glass and broke before I could put it down. Decided to try this style because it was easier to clean. Big mistake. The temperature does eventually show accurately, but there is a large lag before the temperature registers correctly on the dial. You can observe the jump in temperature instead of moving gradually, so the delay is at least 5 degrees. Since I use it solely for making candy, timing and accuracy are key. I checked the calibration in boiling water at my correct altitude and checked everything with my laser thermometer. That's the only reason I gave 2 stars and not one. The potty clamp is so simple and not very strong. You're also limited in the depth of your pan due to the length of the probe, so I guess I won't be able to use them if I ever decide to start deep-frying. Use glass and metal jars for accuracy as you can really keep an eye on the temperature. rise (you can also use a deeper saucepan to avoid overcooking).
