Great for Cornish chickens

Also good for Cornish chickens. 370 degrees for 45 minutes with just salt, pepper and a little basting. Before I put the bird in, I usually make an incision between the thigh/leg and along one side of the lower leg (lengthwise) to ensure even cooking.
