I bought the smallish instant pot, since my kids have left for college, and it’s just me and my husband. I love my instant pot, so I was intrigued when I came across these accessories. I’ll admit that they looked really small when I unpacked them, but they work great for a small family. I like the steamer basket for quick veggies, but I love it for how quickly I can make new baby potatoes. 10 minutes, I’m patting those babies down with butter, adding a pinch of sea salt, and tossing on fresh parsley.I’m a little scared of the springform pan. It’s small for a standard cake recipe, and it would seem more practical to just do a sheet or multiple cake rounds in the oven. However, I have used it for a taco casserole and chicken enchilada casserole. Again, the pan is small, so I just use half of my recipe for the casserole, and freeze the other half to be used later.Easter is coming up, and we usually host, but rarely (never) does anyone offer to bring a side dish or dessert, so I’m planning on pulling out the pot to make eggs for deviled eggs, mashed and new potatoes, and maybe a keto friendly cheesecake for my sister in law who complains that the pecan pie and bread pudding that I make is to rich and fattening.
