
This pan has very little flex as mentioned by others (I assume this was not removed during production). But it's a good, heavy piece of cast iron, and for my culinary purposes at least, it will do very well. As other reviews have noted, the texture is rough, but I don't see that as a problem. I will use it to sear chicken and steak on the ribbed side and sometimes pancakes on the flat side. I expect it will work fine for this purpose and I have many other cast irons so I have some experience using it as a cooktop. If the rough texture bothers you, modifying the pan is easy. There are several videos on YouTube about grinding and resurfacing cast iron to get it as smooth as you want. In general I am satisfied as it is.
