Large Gluten Free Yeast Bread Pan

Firstly this pan has part number 345854 in the Matfer Bourgeat Inc product catalogue. No frying pan 340854 as stated when ordering this frying pan. I ordered a frying pan to see if it was frying pan 345854 and this is it. I baked a loaf of gluten-free yeast bread in this Exopan Matfer Bourgeat 340854 Loaf Pan with Lid. It browned well and was ready after an hour of baking at 350 degrees, covered with foil after 45 minutes. I left the baked bread in the oven (turned off) for another hour in a pan covered with foil. I chilled the bread in the tin for an hour. Before using, I applied a thin layer of olive oil to all surfaces of the casserole dish. The pan is non-stick and my bread came out easily if I cleaned the pan a bit. I put the mold in the oven while it's still warm to make sure it's dry before storing it. I do this with all my metal baking utensils. I've had issues with underbaked gluten-free yeast bread in my parchment-lined glass pans with foil. I'm still trying new recipes with different gluten-free flours. Every bread I've baked was made from a different recipe. The bread I baked in the EXOPAN BREAD WITH LID (Pullman pan) was sticking out over the edges so I couldn't use the pan lid. Next time I'll know to use less batter and try a bread topper. I laugh at the term "bread pan". I don't want mold on bread on the shelf!
