Results VARY - Difficult

.Ok this is a good set - pricey but good for bars. Having just bought an expensive set of kitchen knives, I wanted to sharpen them using the universally accepted "best" method: stones. I came here after seeing many knife sharpening tool reviews on You Tube - almost all regular sharpeners were worse - so I assumed Japanese cooks used sharpening stones. You would be good enough for me. So what's the problem? No instructions - so come back to you for more videos of talented people sharpening rocks and cutting paper, hair on arm etc will tell you if the angle is perfect but I'm guessing it's close) and push back and forth applying 8lbs of pressure on the blade at least 15 times - according to the pros you should feel burry - I have to trust them - I've gotten that. Flip the knife and repeat - start with a stone of 800 and end with a stone of 8000. Only 20 minutes of fairly intense work. And it's messy - very messy, and the result of that was a slight improvement from boring to less boring. The pros told me to practice - so I tried again and a third time. All with the same less-than-desirable result—and more cleanup. I have $70 and am glad I tried but also frustrated that I spent so much on something that takes a very long time (You won't be quick to sharpen a knife before you get started with these tomatoes) and so far it's not mine. The results will definitely vary. My advice if you're in the mood for rock is to get a 1000-3000 set for $40 (or so). I will take the electric one and leave the traditional method to professionals and people who have a lot of free time to dedicate to knife sharpening.
