This knife is well proportioned and well balanced. This is a quick and easy way to prepare vegetables. He takes care of every little detail, just like I hoped! I wasn't sure I'd like the Granton blade, but it definitely makes slicing easier than a knife without this feature. This knife has the sharpest blade of any knife we have ever owned. Plus it was so spicy when I took it out of the box. The handle does not absorb water and there are no cracks or crevices between it and the blade for food to get caught. A color-coded handle is also a plus. I was a little concerned that I might regret not ordering the 7" Mercer Culinary Genesis Forged Santoku Knife. But I have to say this is a fine knife! I doubt I'll ever regret my choice.
