I have a propane stove and it doesn't cook slow enough for many dishes. These disks are the solution. The day they arrived I made a large pot of rich bone broth and let it sit on the large disc for eight hours. Worked great. The enameled side should be in contact with the pan facing up, and the large disk has ridges for the pan to rest on. However, the enameled side is slippery, so be careful when moving the pot and placing the pot on the disc - do not slide the pot under any circumstances. (The smooth cast iron side is in direct contact with the gas. If you use it this way you won't get any bad odors or chipped enamel as some reviews have mentioned.)
