I did a lot of research before purchasing Benriner's #64 Japanese Food Slicer. I also watched a lot of YouTube videos. I'm glad I bought the regular "narrow" because it cuts evenly. If it were wider, like my previous cheap mandolin, there would be too much "kickback" in the middle. There is a knob on the bottom to adjust the thickness of the slice. A big consideration for me was "easy to clean" and this one is very easy to clean unlike my cheap one. No leftovers stay stuck forever. Rough. BUY PROTECTIVE GLOVES AT THE SAME TIME. The blade is amazingly sharp. Minimum pressure required. I have found it useful to stand the slicer upright when using it. I didn't have to change other (supplied) blades for julienne cutting, for example. Soon. After buying and loving mine, I bought two more as gifts.
