I find that gently exfoliating away from me (not towards me) works best for me. I use black for almost everything. Blue is very suitable for small round things like turnips. I can't figure out what red is for as nothing I've done so far works with red. Therefore only 4 stars. Helpful guides and tips would be VERY helpful. I also think it's best to let the blade find its own cutting angle rather than pushing it down like you would with a regular knife. For cucumbers, I start peeling from the middle and toward each end. Very light peeling.
