
I have these versus US cookie baking sheets. Commercial sheets in the US are of high quality, the cookie will slide off the sheet without a spatula, the cookie will spread too thin during baking, and the bottom of the cookie will brown quickly. I have to learn to regulate the temperature in all my recipes. I was very dissatisfied with the way my cookies were baked on this US sheet. Extremely easy to clean. Simply wipe with a damp cloth. Uses some kind of non-stick coating. Expensive, but with good care will last for many years. Crown's commercial sheets are high quality, have a natural non-stick coating of pure aluminum so they won't stick to the baking sheet but require a spatula to remove the cookies, baking the cookies until golden and spreading my cookies. a little, but good and thick. No oven temperature adjustment for my recipes. You need soap and water to clean the sheets but they are very easy to clean no problem. Pure aluminum that is food safe and doesn't leach chemicals out of the pan. Very expensive but has a lifetime with manufacturing defects. I love the way my cookies bake on crown sheets and this is my go-to choice. Worth every penny spent on it. Time will tell if it will last a lifetime. I plan to buy another set so I have 4 sheets on hand. Hope that helps.
