I have some high end expensive knives like Shun, Wustoff etc. High end knives are more expensive because you are paying for a well known brand. As I learned more about kitchen knives, I found it more important to pay attention to the materials the knives are made of, the composition of the materials, the knife manufacturing processes, and the angle of the blade. . As an enthusiastic cook, my knives and their quality are important to me. That's why I'm always on the lookout for new knives that meet my needs. This knife meets all my needs and then some. - It has a 10-15 degree blade angle maintained by Asian knives, which is much sharper than the blade angle of European and American knives. - It is made of VG-10 steel, which makes the blade harder and sharper, which stays sharp much longer than other steels and is resistant to stains and rust. - This is damascus steel which increases the hardness and sharpness of the blade. - It is also important to consider the carbon, chromium and cobalt content of the steel as they increase the hardness and structure of the metal which helps increase the time the blade stays sharp, breakage resistance, rust resistance etc. Don't go into detail as more information is easily found online. This knife comes in a very attractive box, which makes it perfect as a gift. As I bought this knife for myself I won't be keeping the box but appreciate the protective case that comes with it. If you keep your knives in a drawer like I do, it's important to protect the blades from damage. I used to have to buy protective cases separately for my more expensive knives. So I appreciate that this knife comes with a sheath. I also like the included finger guard as I tend to cut myself when I'm in a hurry. The finger guard has an adjustable middle finger holder on the back to fit your finger. With this protector you can make quick, even cuts without worrying about cutting your fingers. The weight of the knife is comfortable in the hand, the grip is comfortable. In addition to the very good workmanship, I also find the handle very appealing. I've been using this knife almost daily for over a month now and I'm very happy with it. It is excellent for slicing even delicate foods such as tomatoes and is ideal for slicing. So far I haven't had to sharpen it and it cuts just as well as the day I got it. Update 5/20/19: I've had this knife for about 2 1/2 months now and use it daily. It quickly became my favorite chef's knife. So far I haven't had to sharpen it and it's still sharper than some of the knives I've bought recently. I highly recommend this knife and am sure it will not disappoint. I prefer a very sharp knife. I've used it for slicing, chopping, dicing, and mincing and it has never let me down. This is the knife I use most, apart from a few specialty knives I own. I can still highly recommend this knife.
