I use this to make banana bread and am trying to get rid of all the awkward aluminum bakeware I have as aluminum in general is horrible to swallow - and get it out of your cookware and into your food drains. I will say that for bread I've noticed that I have to cook food a hair's breadth longer to get the same consistency as when cooked (as opposed to, say, an aluminum bread pan), but I'm pretty sure it has so is - This is due to the heat convection ability of this metal compared to another. It's very easy, just rinse or soak for about an hour when food has built up on it, wipe it off and put it away for the next use. I wash in the dishwasher with no problem but it gets stained, also I try to hand wash all my stainless items.
