Review on Yoshihiro Hammered Damascus Stainless Utility by Juanita Valentin

Revainrating 5 out of 5

Great knife with small flaws

Great little knife starting with 5 stars because I can see the quality of this knife and it deserves 5 stars. Although the standard knife was sharp enough for a shave, it didn't have a very well polished edge, at least compared to my Shun knives, this knife actually felt a bit dull compared to Shun's factory blade. I take a few hits on a 12,000 grit rock and it's up. It also became clear that a 50/50 advantage is accompanied by a 70/30 advantage when used with the right hand. Neither of these are "big things" as both are easy to fix. On the plus side, the balance and weight of the knife is near perfect for this blade size, also the belly is deep enough to get a fair swing for its size, and the perfect size and distance from the bolster to make a great light weight to have feeling . grip style. Once I open the blade to my liking and sharpness I believe this will be one of my favorite knives as it has all the qualities I was looking for. Also, the knife is really cool. I highly recommend that people with some blade polishing skills take a look at this knife as it has many very attractive features that are difficult to find in a knife of this size. The edge I was looking for. Had some serious time on the rocks and got the edge where I wanted it. I want this to be clear. I keep my shun at what I call "dumb" sharp levels. This knife exceeds that level after working with stone. I have cut radishes thinner than standard paper with ease, if you are considering this knife I would recommend just getting it, one of the best knives I have ever used.

Pros
