I chose these thermometer probes because they are smaller than others and fit better in my small WSM smoker, but after about half a dozen cooks I suspected the readings, the I received were not exactly . I've tested these probes on my handheld thermometer and some other probes I had and while everyone else reads +/- 1 degree from the nearest, these probes read about 10 degrees hotter. A value that high would mean the meat is undercooked if I'm aiming to pull properly at the correct target temperature. Luckily, I tend to check the temperature with a handheld thermometer, so I've encountered no issues other than a slightly longer cook time when I see it's undercooked.
