When cheese is available at our local grocery store, we buy it in bulk and then cut it ourselves. The two big problems we had were the cheese slices sticking together or the cheese drying out and becoming hard would. These waxed non-stick papers save the day. Although they're primarily advertised for hamburgers and other meats, they're great with cheese. They tend to be slightly larger than slices of cheese, so the cheese doesn't dry out in the sandwich bags I use. They also make it easy to pull out just as many slices as I need since I put paper between each slice of cheese.
