I have been making my own chopped chicken patties for many years and I always shape the patties by hand, resulting in interesting shapes and uneven cooking. It's plastic but durable. enough. I've made regular patties and burgers with .25 pounds of meat per burger. It takes a few seconds to figure it out and a little practice. I read that some people have problems with sticking. I used cling film to line the bottom of the pan, then pressed the meat against the bottom with my hands, stretched the 4 corners of the cling film over the meat, then pressed the top down for simple burgers, or the smaller top to make one indentation for the filling. When you're done, just flip and slide the bottom out along with the burger. Nothing sticks, easy to clean, overall happy with the purchase.
