Unfortunately meat doesn't have consistent readings on all counts (pork butts are particularly tricky) so I look forward to using this thermometer next time I smoke to make sure the meat is done. on temperature (195-205F) in addition to a few other non-instant read sensors in my arsenal (there are never too many thermometers!). I tested this instant read on some Costco chicken fillets I cooked last night (had to make a quick kid's meal), frozen, and I didn't want to serve a family chicken that was (1) fried on the outside. but raw inside or (2) overcooked. Because overcooked chicken is the worst. This instant read helped me figure out when to stop cooking and for that I am very grateful. My sensors without instant reading wouldn't be as fast as I need them to be when frying. Happy with this purchase. Solidly built and its new home is magnetic to my microwave over my stovetop for easy access when I need it.
