Everything in the world has compromises; more about that in a moment. I purchased this item after seeing on the PBS TV show Cook's Illustrated that Kitchen Aid mixers have 6 wire beaters and 11 wire whisks. A 6-wire whisk came with my Kitchen Aid mixer and worked fine, but I could never figure out why everything I tried to whip took longer than my recipes - especially Cook's Illustrated Recipes - said it would should. When I saw on TV that there was this 11 wire whisk and they said it speeds up all sorts of tasks, the penny dropped. This new whisk did exactly what was described - speeded up whipping time significantly. For my first use, I made Italian meringue for lemon meringue pie. This whisk quickly stirred the egg whites into the hot simple syrup, resulting in a meringue that formed a white, glossy mound on top of the pie filling. The compromise I mentioned earlier? Although the meringue whipped up quickly (and I mean FAST), most of the meringue was in the whisk when I removed it from the machine. So I had to spend some of the time saved using a can scraper to get the mounds of meringue out of the whisk and into the bowl. Regardless, this item is a clear winner and works exactly as advertised.
