Some adjustments to cooking technique needed

At first, I felt a little tricked by the "oven safe to 500 degrees" part, because the pans are only to be used over low or medium heat on the stove top. After cooking a variety of foods on them every day for 2 weeks, I like them a lot, with just one caveat. You have to adjust your cooking technique for some foods, especially meats. First is the pre-warming for 2-3 minutes. That doesn't bother me, since I'm never ready to cook immediately anyway and doing last minute prep at the counter. It does mean having to relearn some things -- I like to sear/brown meat over high heat and sautee/cook stir-frys. That's not really possible here due to the low to medium heat requirement, making cooking times longer for foods that I would normally cook quickly over high heat. Meats do eventually brown, but I haven't discovered how to sear and seal in the juices.The bottom of the pan is very thick, making it more like cooking with a cast-iron skillet. Food will continue to cook a bit after turning off the heat, so do be aware. I like this aspect of the design for some foods, using the residual heat to finish up.So far, I've cooked chicken teriyaki, Brussel sprouts, eggs (of course, in many styles), beef stir-fry, fish, and more. Everything turned out delicious, and slides right off the pan. The last thing worth mentioning are the rivets. They are steel, so food will stick them.The promise of non-stick coating that doesn't wear out is a big deal, but it's too early to validate that claim. I've had to replace 3 Circulon pans in the last few years because the coating eventually wears out over time. Basically, they last about a year each.
