I eat a lot of tofu. I did a lot of research before purchasing this press. That's incredible. It doesn't compress as quickly as the screw version, but doesn't need to be tightened. When I bring the tofu home, I open it up and put it in a press, which I put in the fridge. Catch water carefully. I've found it keeps well in the fridge for at least two or three days, and when I want tofu it's well pressed and ready to go. And very easy to clean by hand or in the dishwasher. I couldn't be happier with that.
