like many others i buy fresh herbs, use what i need and watch the rest go black because i can't throw away the unused pieces. I've tried storing them in an old yogurt container filled with water and covered with a plastic bag (this works, but if your fridge is as full as mine it tips over quite often), I've tried herb pots (they work the same way same principle as the yogurt container and plastic bag, but I found it very difficult to open the blocks after putting the herbs in) and Fresh Mill herb jars (the instructions are very tricky and they must remain upright when you are using them in the freezer camera, which was not possible in my house). While it's not as bulky as other methods I've tried, I can throw in maybe half a bunch of parsley. it can be anywhere in the freezer, and the herb is easy to squeeze when you need it. I believe the instructions state that once frozen, you should use the herb within a few days. I've had parsley in my freezer for 3 weeks and I feel like the quality hasn't been compromised.
