Review on Ontario Knife Company 7060 Cleaver by Erik Wesley

I knew this splitting device would require a bit of work to get it in optimal working order, but what I got is nowhere near as complete as one might imagine. It took me over an hour to remove the grinding and gouging marks from my heaviest Indian stone. From what I can tell I have an amazingly sharp 1095 steel cleaver. The scales are of poor quality and need some work too. Nothing extreme here, just light sanding until it feels comfortable in your hand. I then gave the knife a light patina by slicing tomatoes for the Greek salad and limes for the margarita. I wish I had a fricassee rabbit. It's quite hard for me to review and rate this cleaver because I got a 1 star knife but what I have now is a 4 star knife and if it were better than the scale I would say , it could be five stars.
