Very sharp vegetable knife.

Extremely happy with this knife. I bought it for the sole purpose of cutting vegetables and I have no complaints. It came shipped with the sharpest edge I've ever seen out of a package, and I have a collection of several hundred knives. There is a visible hamon along the bottom quarter inch of the blade but I can't tell if its just cosmetic or legitimate. The top of the blade is a little thicker than most utility or paring knives found today but it doesn't impact the performance of cutting veggies from what I can tell. Blade thickness is about identical to grandma's Old Hickory Tru-Edge boning knife. Handle is two different pieces of very dense hardwoods joined together. I do believe it's a rosewood variety. I only use this knife for cutting vegetables on wood cutting boards and hand wash it immediately after use. As such I don't expect to need to sharpen it for a long time. If you chop directly on your granite countertops, or leave you knives in the sink for days, don't expect this, or any knife for that matter, to stay sharp.
