So I was happy to find this metal

. Finally a quality cookie press with metal parts that will stand the test of time. I've had a few plastic that didn't last very long. The plastic levers just can't handle being pushed up and down and usually break when I'm in the middle of a large batch of cookies. So I was happy to find this metal. I've had it for 9 years now and it still works great. The main thing is that the dough is at the right temperature so that it flows smoothly and quickly presses out one biscuit after another. When it's too warm it sticks, and when it's too cold it hardens. Sometimes when I make a lot of cookies, the dough gets hot, sticky and doesn't compress well. I've found that if I put it in the freezer for a minute it cools enough to start extruding the perfect shapes again. Don't leave it in the freezer for too long or the batter will become too chewy and you'll have to reheat it, which can affect the flavor. It comes with such a wide range of slices that you can make so many beautiful shapes for the holidays or just everyday. I have prepared sweet and savory recipes, delicious and beautiful. It's not something I use every day, but since it's so easy and quick to make cookies, I use them more often than I thought I would. It's easy to clean, take apart and wash in hot soapy water, then let dry on a clean kitchen towel. I have never put it in the dishwasher. I also keep it in a tin to keep it clean. I highly recommend this press.
