Follow the enclosed INSTRUCTIONS!

I see NO difference between these cartridges and OEM. I have an EPSON Workforce 633 and it was easy to replace. A note: if your printer is connected to the Epson website, you should disable that connection and just connect to the network - this is explained in the instructions that came with it, or you can just use the printer's USB port.
