I have several restaurant quality oyster knives with plastic handles and functionally they do the job perfectly. However, they are not very pretty. These knives are beautiful and do an excellent job of removing the skin. I gave them a 4 for durability as I would never wash them in the dishwasher like my others and a 4 for ease of use as the wooden handle is a bit smoother than plastic. However, they are beautiful and well managed. . I will definitely buy them again and I will never be ashamed to give them. Over the years I have reviewed several handmade oyster knives from master craftsmen. This is a great purchase.
