I am a mead maker (fermented honey drink). I don't boil honey, I pasteurize it so that impurities rise to the surface in the form of thick foam. I used to try to skim off the foam with wooden spoons, ladles and spatulas. I either skip a lot of the foam or end up taking off some real honey. A friend recommended using a fat skimmer. I've used it many times since purchasing it and it works great. Cooked honey goes straight through the strainer, which is dense enough to hold the foam. I was able to double my efficiency. It also fits in my dishwasher's cutlery basket for easy cleaning. The only reason I don't give it a 5 is that the metal is very thin and can easily bend with the slightest mishandling; and the filter part is quite small for my needs. Otherwise it works great.
