We live in a small RV all the time. We used to use hard plastic water jugs when we only camped on the weekends, but now we don't have dedicated space for it. We're in touch most of the time, but we always like to have water containers when we travel, both for drinking and for emergencies. You are perfect. When not in use, I can just dry and store them away. We'll be looking for a milk crate or something similar to carry 5 gallons when full just so it's more stable in the truck and doesn't tip over while driving.
