I have a set of [name brand] steak knives that each knife in it--no kidding--cost more than what this whole set cost, and so far these knives are easily as good. They arrive beautifully sharp and, well, just plain beautuful. They slice thru a steak with ease. Anyone willing to care for these knives as if they cost $200 will likely see them perform and last like the very best. I care for these and my pricey ones the same: I never wash them in the dishwasher. After each time I use them, I wash them by hand, drying them immediately and completely. I hit the wood with mineral oil every second or third time I use them. I hone them on a steel before every use. I plan on sharpening them on my whetstone when they start to lose their edge. (Haven't owned them long enough to have done this yet.)The quality of these knives has thoroughly amazed me. May you enjoy them as much as I do!
