Seller's first note: They sent it to me broken. The ring bearing of the fettuccine roller came loose and rattled inside the machine. I didn't know this when I first used the machine, when I tried to roll the pasta through part of the fettuccine machine and it wouldn't roll, I just thought I didn't know how to operate the machine well enough. Luckily I was able to unbolt the car, get to this part and fix it. After using this machine for the first time, I was ready to give it away and buy a nozzle for my kitchen help. This was my first time making homemade pasta so I had no experience with pasta dough or with this pasta maker. The whole experience was scary. Rolling out pasta dough was awkward and the noodles I pulled out were sticky and not pretty at all. I've recently started researching replacement attachments and devices for the Atlas. I have read so many reviews and many of them have given advice about pasta dough. I decided to give my atlas another try. This time I focused on the test. I weighed the ingredients (10 ounces flour, eggs - 2 whole eggs 4.0 ounces and 4 egg yolks 2.5 ounces) to be precise and this time instead of adding water because the dough was dry I used the batter kneaded by hand until all the ingredients have come together. Trust me my dough was too dry. But I kneaded my doubts without adding more water and the dough came together perfectly. After the dough rested for about an hour, it was perfect! I couldn't believe it! This time I set up the atlas, I attached it to the table top (didn't do that the first time) and then started rolling out the dough 3 times at each setting, starting at 0 and ending at 6! The rolled sheets were a beauty! I couldn't believe how different the whole experience was. Rolling was tricky when I first tried it on this machine, but with the right dough it was easy and effortless. In fact, I remember when I first used Atlas thinking I needed three hands to comfortably roll pasta. But this time it was so easy and smooth, I was rolling and running the rolled leaves through fettuccine and spaghetti rollers in under 30 minutes. Two hands were more than enough. The pasta turned out beautiful and delicious! I will still buy 3 piece roller bits but only because I think it will speed up the process. But to be honest, if time wasn't a commodity in my house, Atlas would be all I need. If you start with a good test, the machine really does the rest. Easy to wash, perfect dough, nothing sticks to the machine. I love this machine, I've used it 3 times this week alone! In fact my girlfriend stopped by for dinner last night and after trying the pasta I had hand rolled on this machine she asked me to have a pasta party with her, her 4 year old daughter and my 4 year old daughter, so I. I have no doubts that our girls can roll out the dough on this machine.
