I bought two of these to make nougat. I just tested both of them in the same kettle of boiling water: one read 224F and the other read 214F. If the laws of nature hadn't changed, they should both read 212 F (100 C). I'm frustrated that I now have to convert the displayed temperature and then still wonder how accurate the reading I'm getting is. They also require a significant amount of liquid to take measurements, so they may not be useful for small batches.
