This is going to be a long review as I've been an original V-Slicer user since 1988. Yes, it took that long, almost 30 years! I was hoping to make it 30 years and then replace it, but I dropped the large julienne on my nose and it broke right on the blade line (it broke a bit already, it just sped up the process). I use the most so can't live without. So I bought a new V 5000. It's very similar to the original in every way. The original came with most of the extra accessories you can buy including a grater, vegetable Julenner, waffle maker (was too small) and a cleaning tool set. I broke my vegetable peeler with the lemon curl maker on the side of the knife. This was the only flaw in the set. The new peeling tool comes with another tool that I'm not familiar with, but now they're all optional. But as you can see from the photos (with old and new parts), the position of the blades seems to be exactly the same, even though the old inserts don't fit in the new frame. The new inserts snap into the frame a bit, while the old ones didn't "snap" on their own, but were reasonably secure. Now there's more of that. The food stand mug is of a similar design and appears to have jagged edges on the raised lips which I think have a function but don't know what it is. V 5000 includes a trap and a storage box for cut products. This is a nice addition which is why I chose this set over others. I wouldn't buy any other kit that doesn't include this one. So most of the other reviews relate to this item and the fact that I've been using my old one for almost 30 years. This is simply the best mandolin. No, the thickness of the cut cannot be varied by more than two, but that is of little importance. Thinly sliced, although not wafer-thin, thin enough for almost anything. The thick setting is good enough for thinner fries, and if you need it twice as thick or larger, you'd still use a knife. As many others have said the blades are very sharp so if you use them without a holder you must be EXTREMELY careful. I've never cut myself because I'm so scared of how sharp it is that I take extra care every time I'm not using a holder. Overall I am very happy with this mandolin. Apparently they are turning off the plug-in version and switching to a controlled disease version. Not sure how the julienne tuning will work, but I'm sure it will be similar to other mandolins that come with a few adjustments to the frame. With almost 30 years of experience with this product, this is absolutely the best value for money kitchen tool I have ever seen.
