First, they are not easy to clean. Everything I wear on it leaves stains. That's not necessarily a problem, but if you want everything to look neat, you'll probably need to put something between the stones and the pizza. Second, I don't usually use them for pizza, although I do just to avoid ordering them. I needed a quick solution to create a lid for my oven when I'm moving quickly and I need extra oven space without worrying about burning something. As soon as I remove the pot or pan and turn off the stove, I throw a pizza stone at it. It keeps me from burning anything when I move things and also generates enough heat to keep things warm when needed. A chef I'm friends with in New Orleans recommended it when I asked how I could cover my burners before they cooled completely while juggling dishes. I'm fed up with melted dishes.
