I prefer the Kyrocena double-bladed ceramic plane, although the ceramic blade will fail after prolonged use. It's much sharper, so it just cuts better and faster. Borner costs less money and I thought a stainless steel blade would be more durable. The first thing I noticed about the Borner was how brittle the plastic sheet was, and the second was how much duller it was than the one I was using. While slicing a daikon radish with a large margin of safety but not a tight enough grip, the radish tripped over a dull blade and I cut myself. This has never happened to me with ceramic slicers, which I use almost every day to slice radishes, carrots, cucumbers, etc. for my salads. So I put the Borner back in the box and ordered a third Kyrocena - it costs a little extra. I don't use the holders that come with some slicers, but I don't use Borner unless I'm trying to cut the last batch of veggies, which comes in handy sometimes. But usually I just take the knife and chew it or throw it away.
