The first thing that impressed me about this PICKWILL chef knife is the blade. It is a one piece forged blade with integral tang, butt piece and finger guard. This blade has a little flex in it and is very sharp. I will know after maybe a half year how well it takes a sharpening of the edge. In the meantime, the knife must be treated with respect. Hand wash -- NEVER place in dishwasher. Hand dry and place in a proper knife rack. Per the manufacturer, this blade is German stainless steel, but they caution that even stainless can discolor if not cleaned and dried promptly after use. Some foods like tomatoes, lemons, contain acidic components. The handles are made of a very hard wood or a composite material that looks like wood but it very hard with a well sealed surface finish. All fitment areas such as rivets, scales, are perfectly blended with no crevices or annoying edges. Work with pride with this chef knife.
