I use parchment paper whenever possible. But I hate dealing with paper that keeps curling up, forcing me to put pieces at the corners to glue it on. The parchment sheets are the perfect size for my pan half and baking sheet. They're just too big for my brazier. But they are easy to drop in the corners. In addition, these trays are perfect for baking, frying and frying with enough oil. For example, chicken thighs that are breaded or dusted with cornmeal don't stick! The bottom of the chicken thighs is crispy, not mushy, and they rise straight up without leaving anything on the paper! Same goes for cookies, sausage, roast chicken, roast beef, cookies, you name it! that I automatically pull out a sheet of parchment when I take the pan out of the cupboard. I keep this parchment paper next to my baking sheets and half pans. No more fiddling with parchment paper boxes with sharp blades!
