It can be used in two ways: as a wire probe in the oven or as a rotating probe to check doneness outside the oven. I used this thermometer in the oven. I stuck the probe into the meat and put the thermometer on the stove. This is a feature most thermometers don't have. I don't have to take the meat out of the oven to check the internal temperature because I can read it from the outside. I also checked the accuracy with another thermometer I have. They matched the temperature perfectly. This is a great tool for cooking meat or poultry. I also liked the ability to set an alarm when the meat reached the internal temperature I chose. This helps when you're doing other things in the kitchen and forgetting about the time. My only advice is to read and re-read the instructions carefully. I highly recommend this thermometer for its accuracy and dual purpose.
