Perfect tortillas every time!

I grew up in Southern California, beans, rice and tortillas are home cooking. I make my own beans and rice but use store bought tortillas. I decided I was done with that, bought a Masa Harin and started making my own. I used a rolling pin, the bottom of the pan, but couldn't get the evenly thin tortilla I wanted. I researched the tortilla presses, read the reviews and decided to pay a little more for these. I'm glad I did. The press arrived in good condition and I was given two rivets and cotter pins in case one broke. People break their hands over these things. A few tips for perfect tortillas: use a plastic gallon storage bag (slit all but one side open to create a "hinge"), you don't even need to buy ziplock bags, Fred Meyer (Kroger) provides plenty cheap ziplock bags at - Blitz. You can wash and reuse them. They are much easier to work with than cling film. Don't get tied to the recipe; Many factors, including moisture, can affect how sticky your dough will be. Play with it a little when you make the ball; If it's a bit sticky, add a little more masa. You will feel when it is right. Place a golf ball sized ball between the plastic in the center of the press and flatten it a little (I used a bottle of hot sauce as a rolling pin) then gently press down. Rotate the plastic 180°. degrees and then press a little harder again, this will give you a more even and round cake. Peel off the top plastic wrap, then pick up the tortilla and peel the plastic wrap off the tortilla, not the other way around. and then add it straight to the pan. Perfect cakes! (don't forget a pinch of salt)
