For best results you MUST have a specific type of knife

These are good for flattening a cake. But the type of knife used also makes a big difference. You can do without a chef's knife or a bread knife. Ideally, however, you will need a carving knife. One with a Granton Edge, which is a serrated edge/dimple for smoother cutting and easier retrieval. The Cutluxe does a good job with a bevel of about 8-12 degrees. A simpler explanation is that each side of the blade is sharpened at an angle of about 8 degrees, which matches the sharpness of a surgical scalpel. But you can also use a carving knife with a blade up to 16 degrees (32 degrees inclusive). The length of the carving knife also plays a role. Because your typical kitchen knife isn't big enough to handle certain sized cakes. You can opt for the Cutluxe, but Mercer Culinary also makes a fantastic 14 inch carving knife (Millenia with Granton blade). I doubt you'll find a 16-inch carving knife, just a two-handled cheese knife. So stick with Cutluxe or Mercer. All in all very simple kitchen helpers. But for only nine bucks, getting four of these isn't so bad. They work well and are a good investment for those who love pastries and perfect cakes.
