Stainless Steel is not great for cake

Stainless steel does not conduct heat very well. (Most stainless cookware has better conducters sandwiched inside.) I didn't think about that fact until after I had ordered, and really wanted the unusual 9.5 inch size. My first attempt, I used a recipe I have made many times, and baking strips on the outside of the pans to prevent doming. This cake was firm to the touch in middle, and passed the toothpick test--the center was done. Cake appeared completely cooked. However, when turned out, the sides were not done at all. I have never seen a cake where the inside was finished before the sides. On my second attempt, I did not use the baking strips, as insulation was clearly not needed. This time, the cakes did bake throughout, but I was disappointed by the lack of browning. I like at least a gentle light brown color on the finished product, but that did not occur here. I would not buy these again, and would stick to aluminum in the future even if I have to compromise on the pan size I want.
