We've been using insulated pans for baking cookies and other good things for years, but our pans eventually became so worn it was time to find new pans. I didn't need aluminum air baking pans, so I had trouble finding replacement sheets. I wanted bigger pans and since I have a good Chicago Metallic pizza pan that works well I went with these pans and bought two of them. It's not perfect, but I've learned to work with them and appreciate them for who they are. These are large trays and pretty much take up an entire rack in my oven. This is great for making more cookies at once. Big plus for that. One of the reasons I bought these sheets is because I read that they don't warp when heated. This turned out to be wrong. The second time I used these sheets, I heard a loud bang from the oven and checked what happened. Of course, one of the sheets puckered from the heat and two opposite corners popped out. Luckily I baked something relatively "wet" so nothing would fly off the sheet, and when the sheet was removed from the oven it flattened quickly. I don't really care, but it can be messy depending on what you're baking. After this incident, I never saw the deformation again in any form. Because they are non-insulated and dark in color, baking with them required some adjustments. It's easier to burn things on these slabs than insulated slabs, and as a result I bought matching silicone mats, which helped a bit. I would recommend doing the same if sticking is an issue. That doesn't mean pans are bad; This is a common problem with darker pans and if you are used to using insulated or lighter colored pans this will come as a nasty surprise the first time you use them. I'm happy with these pans, although at the same time I'm disappointed that one of them warped on me during use. The addition of silicone mats made them much better and easier to maintain. If you need a larger baking sheet, this is a good option.
