This press works great. We mix other foods into our patties, so we've found that chilling the meat and keeping it very cold helps shape the patty and handle the meat. We've also found that using the liner on both the top and bottom helps keep things neat and tidy. With our patty mix, we would immediately experience sticking to the press. Everything worked perfectly with the liner on top. Final lesson: DO NOT PUSH until the meat reaches the edges. Continue until the meat touches the edges of the stainless steel. When the meat reaches the edge, it will stick to the sides and the schnitzel will be very difficult to remove. After a few pies, you'll know the correct stopping point.
