A unique, fun way to change the way you cook

I've had a heat diffuser for years and it's just starting to wear out! I've replaced it with a couple more expensive than this one from HIC Harold Import but they didn't last long. Either the handle is badly screwed, or the diffuser is not mounted evenly. I love this one from HIC. He is perfect! It works great and I can say I will have it for many years to come. Until I have to replace it, it costs a penny a month. Don't put it in the dishwasher or soak it under water and they'll last for years. They work great, especially on gas stoves. The first thing that worries me the most is the strong smell. Wash it and then put it on the stove with a heavy saucepan of water and low summer for 30-45 minutes. The new scent is gone. And if it doesn't hold up (bends or creases), you're probably not using it properly. They are not designed (I've been using them for 25+ years as far as I know) to stay in high temperatures. I first learned to use them for macrobiotic cooking but have also used them for delicate foods like caramelization, candy, chocolate and more. It's not for fast food. This is great for slow cooking on the stovetop as food doesn't burn on low heat and cooks sooooo evenly. I find it takes less energy to cook something. The seeds germinate perfectly! It is ideal for cooking vegetables Nishimi style (little water/long slow cooking), slow cooking in general and cooking "crispy" rice. It's such a simple and fun tool! Thanks very much!
