Promised to start the juice early and I was surprised at the sugar content. I ordered a refractometer on Sunday evening, knocked on Wednesday, the device arrived on Thursday. The factory calibration showed 0% for distilled water, so no adjustment is required. Juice started Thursday, with the temperature rising to an all-time high of 69 degrees. The running time was 72 hours. Brix 3.1 at the beginning, 2.5 at the end. Reverted to 2.0 and now back to 2.2 after freezing. Even if you don't need it, it's a great tool. Easy to read focusing eyepiece. It's even easier in bright sunlight or a bright lightbulb. good case. Clever pipette included. I use 4 drops and get a smooth spread. The values agree with my cooking results. I'll report on using it with salt when I remember this summer. Note that this is 0-10 Brix juice, not syrup; for syrup, another device Brix 66-67 is needed, which is part of its range.
